Most Dominican meals are eaten with habichuelas (beans) or yuca (cassava). Yuca can be boiled, battered and deep-fried, or baked. If it is baked, they are made into crisp cracker bread called casabe. Many fruits are grown and eaten seasonally such as mangoes, papayas, pineapple, guavas, avocados, passion fruit, coconut, and  star fruit. Fresh fish is eaten along the coast but sometimes cod is eaten in the inner parts of the country. Small amouts of goat, chicken, pork, and beef are eaten at times. Breakfast consists of eggs, a type of fried meat, and cheese. Lunch is the biggest meal of the day and it includes rice or beans, and some sort of a salad. One common lunch meal is La bandera which is a meal of rice, beans, and chicken. These meals are usually not spicy and most of the food is produced within the country itself.

Banana Pudding

·         6 overripe bananas, peeled and mashed
·         1 cup sugar
·         3 tablespoons melted butter or margarine
·         3 egg whites, beaten to stiff peaks 
                                                                                                           ·         1 cup orange juice 
                                                                                                           ·         2 tablespoons sweetened shredded coconut for garnish

Bread Blueberry Muffins Ingredients: 2 egg whites
3/4 cup sugar
1/2 cup applesauce
1/2 cup skim milk
1 tablespoon maple syrup
1 teaspoon vanilla
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups blueberries, fresh or frozen
Directions:
  1. Set the oven to 375°F. Thoroughly grease a muffin tray with 12 large muffin cups and set aside until ready to use.
  2. In the bowl of an electric mixer, beat the egg whites until frothy. Add the sugar and beat for 1 minute. Stir in the applesauce, milk, maple syrup, and vanilla. Add the flour, baking powder, and salt and mix just until the dry ingredients are moistened. Gently fold in the blueberries.
  3. Spoon the batter into the greased muffin cups and bake in the preheated oven for 20 to 25 minutes, or until golden and the center springs back when gently pressed.
  4. Remove the muffins from the oven and set on a metal cooling rack for 10 to 20 minutes. Using a knife, cut around each muffin and gently ease them out of the pan.

*I think food in the country would be delicious. I want to try some sea food of theirs and their Caribbean desserts sound amazing.
